To be honest, eating healthy during my extremely busy days is hard. Like, really, really hard. When I’m pressed for time, I usually opt for whatever is closest to my next errand or I’ll just listen to my rumbling belly and walk into the next greasiest, artery clogging, fast food joint that I see. Making poor decision like this always discourages me from pursuing the healthy eating lifestyle that I desire and I always feel brainless for not preparing better. To be totally honest, I don’t always feel like lugging around a lunch box to different meetings or events in the city and I don’t always have the time to sit down and enjoy a hearty, healthy, and expensive meal (Center City healthy spots are always the most expensive places to eat for a quick lunch). Recently, I found out about Snap Kitchen which is a shop that creates healthy pre-made meals for busy people. You literally walk into the store and select a meal or two (or however many you would like), pay and enjoy when you have the time.
I’m not sure if you all know but National Dessert Day is officially on October 14th. Yes, you read that correctly, there is a whole day dedicated to delicious sweets! Don’t quote me on this BUT I heard that calories don’t count on National Dessert day. I can’t confirm or deny if that’s the truth but my gut says that it’s accurate. Normally, I try to ignore this significant day because my scale continues to give me disappointing numbers but this year, I was invited to celebrate National Dessert Day at the Grand Lux Café which is the baby sister of Cheesecake Factory. I couldn’t turn down the opportunity to experience the entire dessert menu of Grand Lux Café so I grabbed my hubby and we ventured our way to Grand Lux Café for a memorable dessert filled evening.
There is nothing worse than slaving over a hot stove during these hot summer months. As a way to combat the heat, I threw together 4 ingredients to make a dinner that I willing ate for lunch and dinner ALL week! This meal is vegetarian friendly but the flavor it packs will blow your mind! This is an ideal recipe for people who are on the go, live a busy life, or just don't want to cook on hot days.
At my local fish market there are tons of fish that pop up that I've never seen before. As a true adventurer at heart, I always tend to purchase which ever fish sparks my interest. This particular week, they had whole Blue Fish on sale for $3.99 a pound so I ended up purchasing an entire fish! I didn't know what to do with it so I figured, you're always safe with some type of stew so I decided to make Blue fish coconut curry.
I haven't written a food post in a very long time...I'm sorry. I'm back in full effect introducing a delicious and healthy-ish snack (or meal if you're hungry). This honestly is what happens when I have random fruits in the house. To my surprise, this turned out to be REALLY good and it was so easy!! I hope you enjoy it as much as I did! Oh, and feel free to add a dollop of banana ice cream on top to make it the perfect desert(you're welcome)!
