I haven't written a food post in a very long time...I'm sorry. I'm back in full effect introducing a delicious and healthy-ish snack (or meal if you're hungry). This honestly is what happens when I have random fruits in the house. To my surprise, this turned out to be REALLY good and it was so easy!! I hope you enjoy it as much as I did! Oh, and feel free to add a dollop of banana ice cream on top to make it the perfect desert(you're welcome)!
1 ripe Plantain
1 handful of blueberries
1 Tbsp of full fat Coconut Milk
1 1/2 Tbsp pf Coconut Oil
Place a medium sized pan over a medium flame and add Coconut Oil. Let heat and prepare your plantain by slicing into 1/2 - 1 inch thick pieces ( you don't want them to be too thick or else they will not cook through). Once your oil has heated, add your plantains.
Allow your plantains to fry until the edges become golden brown (about 5 minutes). Once edges are golden, flip and allow the other side to brown. Make sure you have a small pile of paper towels handy to absorb the excess oil from finished plantains.
When your plantains have finished frying, place them on the paper towel to drain and cool down. When they are finished cooling, add to your serving plate. When finished with plating, wash your fresh blueberries and sprinkle them over your plantains. Top off your plate with a tablespoon of coconut milk for a hint of tropical yumminess and your done! Boom!
